Learning to cook

One of things that I have decided to do now that I have more time is to learn to cook "outside the box." I know "HOW" to cook but never branched out. I was "good" at chicken, and heating canned veggies and I feel like we ate a lot of Hamburger Helper.
So in the last week I have branched out. Pork loin, Meat Loaf, sauteed shrip, fresh veggies and more. Here are some of the meals we have had in last week.

Meat Loaf, Mashed Potatoes, and Fried Okra.
Rosemary Pork Loin, Rosemary and Garlic Roasted Potatoes, and Green Beans and Corn
Sauteed Shrimp (with peas and carrots) over rice.
Broiled Chicken, Baked Potato, and Chowder peas

Update

As most of you know and I am a stay at home mom for the third time. I was home for a year when Abby was a baby; I was home three years with Samm and Kate. Maybe God put me on the earth to mother. I am so thrilled to be home again. I feel that I was a horrible mom when I was working. I worked 40 hr a week and had different people raising MY kids. Ok enough if stuff you already know and on to a Nunn Update.

This time last year Matt and I made the decision to take Abby out of public school and send her to Westminster Christian. This was a decision that was made through lots of tours, testing and prayer. Abby started 2nd grade at WCA in August of 2011 and we could not be happier with the placement God made. She has thrived and excelled at the advanced curriculum and has made great friends. Turns out her "Best Friend" Lives right her in Winterville. We are so thankful that God put the Lunsford’s in our lives.

Abby is finishing up her first year at WCA and is excited to return next year. Abby has grown leaps and bounds in her faith and now has a relationship with the Lord that is amazing. She is currently reading the New Testament (on her own)

Abby has discovered that she is very athletic and loves sports. She played soccer for the WCA Revolution this past fall, and she played Basketball on the 2nd place finishing WCA Mavericks this winter and is currently taking Tennis lessons at Jennings Mill (This is my moms influence).

Samm has also had some major changes. She started Pre-k this year and started the year at Winterville Elm. After a month we moved her to the WCA pre-k program and she has thrived as well. She can write her name as well as all of her letters. Samm has also made some great friends and is developing a love of Christ and is growing in her faith as well.

Samm is now home with me two days a week as her pre-k program is the other three day and I am so glad I get some one on one time with her. She a very interesting and complex child and I look forward to figuring her out.

Ok on to the LULU. Kaitlyn was bounced around ALOT when I started working and we have finally found the PERFECT match for her. We moved her to University Child Care in January and she is also making so big strides. She is potty trained and has given up her Binky. When I resigned from my job we decided to keep her there two days a week. Those two days are the days Samm is with me.

However, home is a different story with Lu. She does not sleep well and I have to lay down with her only for her to be in our bed by 1 or 2 am. She is a little food thieve and is always sneaking in the kitchen to get a snack. She is in love with our sitter Chelsea (I’ll explain later) and cries for her when she’s hurt.

Her speech as improved tremendously in the last 4months and she is now speaking very well, although her letters are not always right. Hook for look and wawa for lala are some examples.

Now to tell you about our Dawg; Her name is Chelsea and she is a sophomore at the University. She came in to our lives in July of 2011 and has been a blessing to our little family. She has become a member of our family in so many ways. I enjoy her company and she is great with the girls.

Matt is in his 7th year at Charter and works all the time. He is in charge of all the fiber for Ga and loves his job. He enjoys being outside and playing X-box with the girls in his time at home. He is looking forward to some time off in later April early May.

Trampoline

We took Sammi out on the trampoline this afternoon and she loved it. It took her a little while to warm up to the fact that the trampoline is not a hard steady surface but she got over her fear. We took a ball out and she loved chaseing the ball on trampoline and trying to throwing it at her daddY



Abby of course is not home. When is she ever. She tries her best to be at Her Grandmommies as much as possible these days and that ok because I know I'm no fun seeing that I am about to pop and have no energy. She did a fun day though. We talked to her and she was having too much fun burning leaves with PAPA and her job was to keep the water on the fire so it wouldn't get to big. More to come.
